We at Skys ultimately aim to achieve and exceed the goals of our clients so if you do not see exactly what you are after, we can create a package to suit your needs and budgets.

Beverages may be charged on consumption (a limit may be set) or the following packages are available as an option

Package A - unlimited consumption for four (4) hours - Price on application

Hors-d'ouvres

Savoury Selection: Charged per platter.

  • Platters can include a selection of savouries including pastries, quiche, kebabs, thai meatballs, curry puffs and other savour delights.

Deluxe Savoury Selection

  • For an small extra charge per head we will serve a selection of exquisite desserts on platters with tea and coffee at the appropriate time.

Crudite Platter : Charged per platter.

  • Fresh Garden vegetables, Carrot, Celery, Capsicum, Dip & Crackers.

Antipasto Platter : Charged per platter.

  • Salami, Asparagus, Sun Dried Tomatoes, Feta and Olives, Artichoke Hearts, Olives.

Cheese Platter : Charged per platter.

Plated Meal Selections

Cold Entrees

  • Caesar Salad - A traditional favuorite, with a combination of cos lettuce, bacon lardons, golden croutons and chef's special Caesar dressing topped with Parmesan cheese.
  • Cajun Chicken Salad - on mesculin mix with lime yoghurt dressing.
  • Seasoned Chicken Caesar Salad - The chef's specially seasoned chicken fillet, tossed through a traditional Caesar salad.
  • Thai Beef Salad - Mixed lettuce, marinated beef shavings with Cherry Tomatoes and mixed sprouts.
  • Tasmanian Smoked Salmon Salad - served with capers, cracked papper and citrus pesto dressing
  • Avocado and King Prawn Salad - Delicious Queensland King Prawns and Avocado served with fresh salad greens and Chef's special dressing.

Hot Entrees

  • Beef Lasagne - traditional style past layers topped with homemade Napoli sauce and shaved parmesan
  • Seafood Tartlet - Delicious blend of Queensland seafood in creamy sauce served in a shortcrust pastry shell.
  • Chicken & Mushroom Tartlet - Tender chicken pieces in a creamy mushroom sauce served in a shortcrust pastry shell.
  • Baked Ricotta Cake - layers of ricotta cheese with char grilled vegetables, served warm on a bed of mesculin mix and balsamic dressing.

Soup

All soup is served with freshly baked crispy bread.

  • Chilled cucumber soup with prawns
  • Chicken and Corn noodle soup
  • Roasted Pumpkin soup with crabmeat
  • Spicy tomato and bacon with basil
  • Potato and Leek soup
  • Cream of gourmet mushrooms

Main Course - Chicken

  • Champagne Chicken - champagne poached breast of chicken, topped with a beaurre blanc, tasmanian smoked salmon and avocado
  • Pink Chicken - Tender breast of chicken topped with Chef's pink peppercorn Hollandaise.
  • Oven baked Chicken - Oven baked chicken served with white wine, garlic and spring onion sauce.
  • Teriyaki Chicken - breast of chicken marinated in traditional teriyaki sauce, grilled and served with spring onions

Main Course - Beef

  • Beef Tenderloin - chargrilled beef tornados, served with a gourmet mushroom ragout and drizzled with balsamic glaze.
  • Traditional Rib Roast - slow roasted to perfection, served with rich roast jus.

Main Course - Pork

  • Asian Pork Fillet - mouth watering pork fillet medallions, served in ginger, soy and sesame oil, served on mesculin salad and vermicelli noodles.
  • Pork Fillet Marsala - pork fillet medallions flambéed with marsala and finished with mushroom cream sauce.

Main Course - Lamb

  • Roast Leg of Seasoned Lanb - Served on sweet potato compote and finished with rosemary and red wine jus.
  • Lamp Rump- Rubbed with indian spices, grilled and served with fresh herd yoghurt and date jam.

Main Course - Fish

  • Mango Fish - Oven baked fish with Tropical Mango salsa and roasted macadamia nuts
  • Cajun Barramundi Buerre Blanc - Cajun spiced barramundi fillets, grilled to perfection then crowned with twists of Tasmanian smoked salmon, finished on a dill and Pernod Buerre Blanc.
  • Grilled Fish - Queensland's finest grilled to perfection, finished with a light dill and lemon sauce.
  • Barramundi Marina - Barramundi fillet topped with fresh Bay Bugs and served with a citrus hollandaise.

Desserts

All desserts served with freshly brewed tea, coffee and chocolates

  • Pavlova shells filled with fresh fruit, cream and berry coulis.
  • Apple crumble served in individual ramekins with ice cream
  • Missippi Mud Cake with white chocolate sauce

  • Profiteroles Deluxe - Freshly prepared profiteroles filled with Grand Marnier cream and topped with rich chocolate sauce.
